Fish are one of the most versatile proteins on the planet. Smoke, baked, raw, fried, on the grill, and even cured. With thousands of species ranging in different depths and locations all over the world there is a nearly endless variety of flavors and textures.
When someone tells me they don’t like fish I can almost guarantee they haven’t had fresh fish that was cared for properly. Once you decide you are going to keep a fish it should be bled and packed in ice.
